Oatmeal Raisin Cookies

Mom's recipe for the thickest, fluffiest cookie.

Oatmeal Raisin Cookies

When done properly, these cookies are thick in the middle with the texture closer to a muffin than a typical cookie. Rehydrating the raisins makes them plump and juicy, and using the raisin water gives the whole cookie the extra raisin essense.

Ingredients

  • 1 cup raisins
  • 1 cup water
  • 3/4 cup butter
  • 1½ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2½ cup flour
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 2 cups oatmeal
  • ½ cup nuts

Method

  1. Put the raisins and water in a small sauce pan, and cook over low heat for 20 min. Drain and save liquid.
  2. Cream together the butter, sugar, eggs and vanilla. Stir in reserved liquid.
  3. Add the raisins and mix.
  4. Add the flour, baking powder, baking soda, salt, cinnamon and cloves. Blend well.
  5. Add the oatmeal and nuts. Mix well.
  6. Bake 375° for 8-10 minutes.
